Hair Care & Styling for Men - Molding Paste vs Gel?

i'm a 25 y-o guy and i'm starting to have long hair and i'd like to use a product to give more style. Something like an alternative to gel..(without the macho or wet appearance.) i've come accross molding paste which i've used once but only a little bit and i thought it was very nice.. but what exactly is this for and what does it do..and how does it compare to gel? how much quantity do we have to use and how often..? the product descriptions say very little and salespeople arent very informed.
